lenakmeth @gchrupala Also, canned chickpeas are ridiculously versatile, put them in curries, bake them until crispy, chickpea "meatballs", even use them for brownies. And, the water from the chickpea can is aquafaba = vegan substitute for egg.

lenakmeth @gchrupala Sealed tofu is shelf-stable (refrigerate after opening), marinate it with soy sauce & spices, crumble/cube it & sauté it, and you have a good substitute for meat, e.g. in bolognese sauce.
Also, frozen vegetables have the same nutritional value as fresh: stock on onion & gralic.
